Allergy-Friendly Pancakes

You'd never guess these pancakes are allergy friendly. They are fluffy and light and taste just like the real deal without any of the common allergies. Perfect for breakfast with the kids, brunch with friends, or anytime you are craving a stack of pancakes that everyone can enjoy.

Ingredients
  

  • 1 cup gluten-free all-purpose flour make sure it includes xanthan gum or add 1/2 tsp if it does not.
  • 1 Tablespoon sugar
  • 1 Tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup dairy free milk such as oat, almond, soy, coconut. I prefer oat.
  • 2 Tablespoons Vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract add more to taste

Equipment

  • 1 griddle or large skillet

Method
 

  1. Prepare the dry ingredients: In a large bowl, combine gluten-free flour, sugar, baking powder and salt.
  2. Prepare the wet ingredients: In a separate bowl, combine the dairy free milk, oil and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until combined. The batter should be thick but pourable. If it is too thick keep adding in more milk until till your desired consistency.
  4. Heat the griddle or pan over medium heat and lightly grease. Pour batter onto the skillet about 1/4 cup for each one. Cook until it starts to bubble on the top and flip. Should be about 2-3 minutes per side. They should be a nice golden brown.
  5. Serve warm with your favorite toppings. Enjoy!

Notes

This can easily feed a family of 4 with a few leftovers.  I usually double to recipe and freeze the rest.  
Some tips on freezing:  Store in an airtight container or freezer bag.  Place parchment paper between them to prevent them from sticking. When you want to eat one you can place them in your microwave for 1 minute (time may vary)
